A family favorite for sure...
These banana chocolate chip muffins aren't anything 'special' but sure are a family favorite here. And no...there is no cottage cheese or greek yogurt (this time 😜).
BONUS: These muffins are a favorite for Ava, my young daughter who has crohns. I know everyone's food triggers can be different, but these are super easy on her gut.
Let's get to the details...
*Mix wet & dry ingredients separately.
WET INGREDIENTS
4 - Banana's
1 - Egg
1/2 cup - Butter
DRY INGREDIENTS
1/2 cup - Sugar (you can use less as well if you wish)
1 tsp - Baking Powder
1 tsp - Baking Soda
1/2 tsp - Salt
1 1/2 cups - Flour (Feel free to use a combination of White & Brown flour)
1/2 cup - Chocolate Chips
*Mix wet & dry ingredients separately. I have even mixed the bananas and egg first with a beater and then folded in the butter and I found the muffins were even fluffier after trying that. But really, these muffins are great no matter how to whip them up.
I have used both my normal & mini size muffin pans with this recipe. For normal pans, it was about 15 minutes at 350. For the mini pans, it was a bit less baking time.
