Such a delightful afternoon snack...
These muffins were a big hit with the family - especially at lunch time. Similar taste to a cheese biscuit, but fluffier. Mild in flavour, but is a great option for a light lunch or school snack.
BONUS: These just take a few minutes to whip together. I loved how easy these were to make!
Let's get to the details...
*Mix dry & wet ingredients separately.
DRY INGREDIENTS
2 cups - Flour
1/3 cup - Sugar
1 tbsp - Baking Powder
1 tsp - Salt
1 tsp - Baking Soda
1.5 cups - Shredded Cheese (Cheddar or whatever you wish to use)
WET INGREDIENTS
1 cup - Yogurt (Plain or Greek)
2 - Eggs
1/4 cup - Butter (melted)
*Mix together dry ingredients & then pour in wet ingredients. Only mix until blended so you don't overmix to ensure light & fluffy muffins.
I have used both my normal & mini size muffin pans with this recipe. For normal pans, it was about 15 minutes at 350. For the mini pans, it was a bit less baking time.
