A wonderful morning muffin...
The first time I made these muffins, they were a huge hit with the family. Then my oldest gave me a fabulous idea of adding a few spices to give them a french toast flavor. And so with that...this recipe was created.
BONUS: These muffins freeze fabulous so I love to make extra for breakfasts all week.
Let's get to the details...
*Mix dry & wet ingredients separately.
WET INGREDIENTS
1/4 cup - Butter (softened)
1 - Egg
3/4 cup - Milk
1 cup - Cottage Cheese
DRY INGREDIENTS
1 cup - White Flour
1 cup - Whole Wheat Flour
1 tsp - Baking Powder
1/2 tsp - Baking Soda
1/2 cup - White Sugar
1/4 tsp - Nutmeg
1 tsp - Cinnamon
*Mix together dry ingredients & then pour in wet ingredients. Only mix until blended so you don't overmix to ensure light & fluffy muffins.
*After baking, sprinkle with cinnamon if you wish.
Divide equally into large muffin tins and bake for about 15-17 minutes at 350. And if you're looking for amazing silicone baking trays so you don't loose half your muffin to the muffin liners, you gotta try these ones! I love them!
