A Perfect Treat for Mom on the go...

If you're anything like me, we are always on the go and find ourselves carpooling our kids everywhere. With that routine, my eating habits take a hit - even though I am working very hard to try and be better. So here I am, in the car wishing I had a savory snack that would satisfy the slight sweet craving and fuel my body. Enter - this amazing treat without the price tag of buying food on the run.

BONUS: It tastes just like an Eatmore bar! Not too sweet, chewy with a lovely little crunch and has some protein to top it off.

Homemade Eatmore Bar

Let's get to the details...

Ingredients:

*Add melting ingredients together in a non-stick pot.

MELTING INGREDIENTS

1 cup - Peanut Butter

3/4 cup - Honey or Maple Syrup

1 tsp - Vanilla

1 cup - Chocolate Chips

DRY INGREDIENTS

1.5 cups - Oatmeal

1 cup - Crushed Peanuts

1/2 cup - Crushed Flax Seed

*Melting ingredients can be warmed on medium heat until fully melted. Then combine with dry ingredients. Stir thoroughly and pour into a 9 x 13 pan. Smooth out and place in the fridge for an hour or so before cutting.

I love how these are a no bake treat!

I will mention, that I tend to add and adjust this recipe very often. It's a fabulous recipe to just 'go with the flow'. If there is something you'd like to add in, like rice crispies or hemp hearts, go for it! But keep in mind if you add more dry ingredients, you may need to increase your honey or chocolate amount to your bar stays together when you cut it.
