Peanut Butter Cottage Cheese Muffins

Peanut Butter & Protein = Perfection!

Time to level up your protein intake without even knowing it because these muffins are sooo good!

BONUS: I honestly didn't know how this was going to turn out with cottage cheese, but I was surprised that you don't even taste it! So don't be scared...it will be ok. 😋

Baked Oatmeal

Let's get to the details...

Ingredients:

*Mix dry and wet ingredients separately.

WET INGREDIENTS

1/2 cup - Coconut Oil (or any other oil)

1/2 cup - Peanut Butter

1 tsp - Vanilla

1 cup - Cottage Cheese

1/3 cup - Greek Yogurt (or Milk)

2 - Eggs

DRY INGREDIENTS

1/2 cup - Brown Sugar

1 1/2 cup - Flour

1 tsp - Baking Soda

1/4 tsp - Salt

3/4 cup - Chocolate Chips

*Pour together and mix just until well blended. If you over mix your muffins, they tend to become more dense.

Kid Friendly Treats

Cooking Time:

Bake at 350 for 20-25 minutes.

I am loving my new silicone trays and I divide this batch into both trays - which is 16 muffins. They are a bit small, but feel free to make them bigger. If you haven't tried silicone trays before, they are amazing. I got mine from IKEA, but these silicone trays are fabulous too. I have the mini muffin trays of this brand and they work great!
