Light, fluffy & filled with protein!
These muffins are so tasty! I used raspberries, but I am confident any berry would work. I am tempted to even try peanut butter chips in this recipe...which sounds like a fun experiment to me. Hehe.
BONUS: These muffins bring a pop of flavor with the berries and extra protein added in...WIN WIN!
Let's get to the details...
*Mix dry & wet ingredients separately.
WET INGREDIENTS
2 - Eggs
2/3 cup - Canola oil
1 cup - Greek yogurt
1/4 cup - Milk
DRY INGREDIENTS
1 1/4 cup - Whole wheat flour
1 cup - White flour
1/4 cup - Vanilla protein powder
1 tbsp - Baking powder
1/2 tsp - Baking soda
1/2 cup - Sugar
1/2 tsp - Salt
In Addition:
1 1/2 cup - Fresh or frozen berries. Any berry would work great: blueberries, strawberries, raspberries...you pick! If you are using frozen berries, toss your berries in 1 tbsp of flour before adding them to your mixture.
*Mix together dry ingredients & then pour in wet ingredients. Only mix until blended so you don't overmix to ensure light & fluffy muffins. Then gently fold in your berries.
Divide your batter equally into your muffin tins and bake at 350 for around 17-20 minutes. And if you're looking for amazing silicone baking trays, you gotta try these ones! I love them! Once they start to look golden brown on top, do the toothpick test and then vola...
